There does not seem to be an added benefit to using one or the other of German or Roman camomile seeds when starting your garden. As mentioned the camomile plants can be a beneficial companion plant for most garden species. Unless the climate is cooler, since German camomile seems to thrive better in that weather. It may also depend on what is wanted - a camomile lawn or a crop to harvest for an herbal remedy.
In general the literature and marketing tends to favor German camomile for creating the herbal remedies, while Roman camomile is popular for making a camomile "lawn" with a thick covering of the plant that gives off a fresh, pleasant scent.
